Added Support for RP Pico and RP2040

Hi There. 

I have been making custom PCB's for peoples (mainly friends and friends of friends) racing sims for a while and have been pushing them to use SimHub as the software of choice.
I have recently begun to switch over from AVR processors to the RP2040/Pi Pico due to reduced cost of production and simplified BOM/Design (mainly for speed of development and production). To support this i have been rewriting SimHubs arduino programs to support it on a case by case basis. but now have begun getting requests for control boards from outside my own community making custom firmware for every person unobtainable for the time I have available.

Now that Arduino IDE now supports the RP2040 via the MBED OS Core, can SimHub be updated to support the RP2040/ Pi Pico?

I love SimHub and I love helping people make their ideal setup a reality with custom Wheel/dashboard PCB's and i would love to bring the two together with official support 🙂

THAT WOULD BE AWSOME! I have  a lot of rp2040 laing around and now is even cheaper than an arduino! i also just saw a pico W with bluetooth capabilities... could be really fun to build battery powered accessories...

If anyone had any success adding a Pico as a custom serial device or forging some link to the Arduino-Based plugins, please do tell!

Is there any chance at all that RP2040 will ever be supported? They are cheap and available. I've never had any issues replacing Arduinos with Picos in my projects.
